Rice is the seed of the grass species Oryza sativa (Asian rice) or Oryza glaberrima (African rice). As a cereal grain, it is the most widely consumed staple food for a large part of the world’s human population, especially in Asia. It is the agricultural commodity with the third-highest worldwide production, after sugarcane and maize.
Soybean that has been cultivated for long time as a principle food crop in Asia is one of the critical international food resources, containing approximately 40% protein and 20% fat. And soyasaponin (Soyasaponin (saponins in soybean) constitutes 0.5% of the total soybean dry weight. In addition to these components, soybeans contain tocopherol, phytic Acid, trypsin inhibitor, hemaglutinin.
The Bacillus subtilis, used in the fermentation of the soy beans, weakens the activity of intestinal bacteria and recognizes the antimicrobial action against pathogens. By inhibiting the activity of the bacteria, it reduces carcinogens made by the bacteria and carcinogenic substances such as ammonia, indol, and amines. They also absorb and excrete these harmful substances. When the bacillus proliferates, the soybean protein decomposition enzyme is created, which melts blood clots, preventing cardiac infarction and cerebral thrombosis.
